Method
- Preheat oven to 180 degrees.
- Place the coconut oil in a bowl and microwave for one minute until melted.
- Remove the bowl and add milk, lemon juice, lemon zest, maple syrup, vanilla extract, black seeds and almond meal, baking powder and bicarbonate of soda.
- Mix well, adding a splash of milk if too dry.
- Transfer the mixture between muffin cases into a muffin tin.
- Bake in the oven for 15-20 minutes until risen or until an inserted skewer comes out clean.
