Lemon Nigella Seed Muffins

Accredited nutritionist and Hab Shifa ambassador, Faye James has developed a family-friendly, nutrient-rich recipe – an all-occasion treat, Lemon Nigella Seed Muffins, for the family to enjoy.

  • The Lemon and Nigella seed muffins have a secret superfood ingredient to help boost your immunity – Black Seed. Black Seed pertains many health benefits as it’s high in antioxidants and rich in thymoquinone, which has potent antioxidant and anti-inflammatory effects.
  • According to Faye “Black Seed has a delicious robust flavour that’s slightly bitter and spicy. It’s often compared to cumin seed, onion and oregano but has a nuttier flavour.”

Lemon & Nigella Seed muffins
Ingredients

  • ¼ cup coconut oil
  • 1 tsp vanilla extract
  • ¾ cup almond milk
  • 3 tbsp  Black Seeds
  • 8 tbsp freshly squeezed lemon juice
  • 2 ½ cups almond meal
  • 2 tbsp lemon zest
  • 1 tbsp baking powder
  • ½ cup maple syrup
  • 1 tsp bicarbonate soda

 

Method

  1. Preheat oven to 180 degrees.
  2. Place the coconut oil in a bowl and microwave for one minute until melted.
  3. Remove the bowl and add milk, lemon juice, lemon zest, maple syrup, vanilla extract, black seeds and almond meal, baking powder and bicarbonate of soda.
  4. Mix well, adding a splash of milk if too dry.
  5. Transfer the mixture between muffin cases into a muffin tin.
  6. Bake in the oven for 15-20 minutes until risen or until an inserted skewer comes out clean.
