Ingredients
- 1 x 400g can chickpeas, drained and rinsed
- 4 tbsp tahini
- 3-4 tbsp fresh lemon juice
- 2 tbsp extra virgin olive oil
- 2 garlic cloves, minced or chopped
- Sea salt
- 2 medium ripe avocados, seeds and skin removed
- Paprika, for serving
- Vegetable sticks or organic corn chips to serve
Method
Combine chickpeas, tahini, lemon juice, olive oil and garlic in a food processor, processing until smooth. Add 2-3 tbsp of water if needed, to help the mixture become smooth and creamy—season with salt to taste. Add avocados and process again until the mixture becomes creamy and well combined.
Transfer mixture to bowl and top with a light dusting of paprika to serve.
